Description

This baked cauliflower mac and cheese recipe is the BEST way to enjoy tender cauliflower florets drenched in an oozy, gooey cheese sauce.


Ingredients

  • 1 recipe of Vegan Cheese Sauce
  • 1 additional garlic clove
  • ½ teaspoon of additional sea salt
  • Heaping ¼ teaspoon of smoked paprika
  • Pinch of cayenne
  • 1 large cauliflower, broken into ½-inch florets (approximately just over 2 pounds)
  • ¼ cup of panko bread crumbs
  • Parmesan or Vegan Parmesan, optional, for serving

Instructions

  1. Prepare the cheese sauce by following this recipe. Add the extra garlic clove, ½ teaspoon of salt, smoked paprika, and cayenne, and blend everything together.
  2. Heat the broiler in the oven before you begin.
  3. In a large pot, bring salted water to a boil.Add cauliflower florets and cook for 5 minutes.Drain the cauliflower and transfer it to a large bowl.Stir in the cheese sauce until the florets are evenly coated.Transfer the mixture to an 8×8-inch baking dish.Sprinkle panko on top.
  4. Broil for 2 minutes until the topping turns lightly brown.Remove from the oven and serve. Optional: Sprinkle with Parmesan or vegan Parmesan, if desired.
