Spice Rub

Pork Chops
- 1 lb. bone-in pork chops (about 1.5 inches thick; typically 2 chops)
- 2 tablespoons olive oil
- 2 tablespoons whiskey or bourbon
- 1 cup chicken broth
- 1 teaspoon apple cider vinegar
- 1 teaspoon maple syrup
- 1 tablespoon minced garlic
- 1 tablespoon cornstarch
Instructions
- Prepare the Spice Rub: In a small bowl, thoroughly mix brown sugar, garlic powder, onion powder, coarse salt, ground cinnamon, dried thyme, and black pepper to create the spice rub. Set it aside for later use.
- Season the Pork Chops: Place the bone-in pork chops on a plate and generously rub the spice mixture all over both sides, ensuring the meat is evenly coated.
- Sear the Pork Chops: Turn on your Instant Pot and select the sauté function. After this,Add the olive oil and let it heat up. Carefully place the seasoned pork chops in the pot and sear each side for 1.5-2 minutes until they are nicely browned. Once done, remove the chops and turn off the sauté function.
- Deglaze the Pot: Pour the whiskey and chicken broth into the Instant Pot to deglaze, scraping up any browned bits stuck to the bottom. This step is important to prevent the burn warning. Then, stir in the apple cider vinegar, maple syrup, and minced garlic.
- Cook the Pork Chops: Place a metal trivet inside the Instant Pot and arrange the seared pork chops on top. Secure the lid, turn the valve to sealing, and cook on manual high pressure for 10 minutes. Allow a natural pressure release for 10 minutes before quickly releasing any remaining pressure.
- Make the Gravy: Remove the pork chops and trivet. Stir in 1 tablespoon of cornstarch to the cooking liquid in the pot. Turn on the sauté function and whisk until the gravy thickens.
- Serve: Plate the tender pork chops and drizzle the rich gravy over the top. Enjoy with your favorite side dishes.
