For this recipe, it’s best to use fresh bone-in pork chops that are approximately 1.5 inches thick. You can find these at many grocery stores, including Trader Joe’s. If bone-in pork chops are not available, you can use boneless ones of a similar thickness. Since this recipe involves a rub and a quick sear, it’s important to use fresh pork chops. If you have frozen pork chops, simply thaw them in the fridge overnight before using them. This recipe requires 1 lb. of bone-in pork chops, which should yield around 2 chops that are 1.5 inches thick.

Dry Rub Time

Here’s what you’ll need for the dry rub:

  • Garlic powder
  • Onion powder
  • Coarse salt
  • Ground cinnamon

Set the Instant Pot to the sauté function and add a generous amount of olive oil to the bottom of the pot. Once the oil is hot, sear both sides of the pork chops for approximately 1.5 to 2 minutes, or until they are nicely browned. Deglaze Instant Pot

Now, it’s time to deglaze your Instant Pot. What does this mean? Essentially, you are removing the little bits and chunks from the bottom of your Instant Pot so that you don’t trigger the burn feature when you start pressure cooking. Add whiskey and chicken broth, then use a wooden spatula to scrape off any debris from the bottom of your pot. Our pot.

After your Instant Pot beeps to signal the end of 10 minutes of pressure cooking, let it naturally release for another 10 minutes before quickly opening the valve.

After removing the pork chops and trivet, switch your Instant Pot to sauté mode. Once the gravy is heated, add approximately a tablespoon of cornstarch and whisk until it dissolves and thickens. Then, remove the gravy and set it aside.
