Wet Ingredients:

  • 2 large eggs
  • 3 medium bananas
  • ½ to ¾ cup plain, unsweetened almond milk
  • 1 teaspoon vanilla extract
  • ¼ cup melted coconut oil

Instructions

  1. Preheat the Oven: Start by preheating your oven to 350ºF. After this,Spray a bread pan with nonstick cooking spray and set it aside.

  2. Roast the Bananas: Place the 3 bananas (with their peels on) on a cookie sheet. Bake them in the oven for 10-15 minutes until they become fragrant and dark brown, then take them out to cool, or if you prefer, you can skip this step and mash the bananas raw instead.

  3. Mix the Dry Ingredients: In a medium-sized bowl, combine all the dry ingredients except for the chocolate chips.

  4. Prepare the Wet Ingredients: In another bowl, mash the 3 roasted bananas using a fork (or blend them for a smoother texture). Then mix in the eggs, almond milk, vanilla extract, and melted coconut oil.

  5. Combine Ingredients: Gradually add the dry mixture to the wet mixture, gently folding in the chocolate chips and mixing until everything is well combined.

  6. Bake the Bread: Pour the batter into the prepared bread pan, sprinkle a few extra chocolate chips on top for added sweetness, and bake in the preheated oven for 45 to 50 minutes.

  7. Cool and Serve: Once baked, remove the banana bread from the oven and let it cool for about 5 minutes. Carefully remove it from the pan and let it cool completely on a wire rack.
