- 2 cans organic black beans (3.5 cups total if using cooked dried beans)
- ½ cup low sodium chicken (or vegetable) broth
- 1 teaspoon minced garlic
- 2 sweet peppers or ½ a jalapeno (optional)
- 1 cup Feta crumbles
- 1 teaspoon chili powder
- 2 teaspoons garlic powder
- 1 teaspoon garlic salt
- ¼ tablespoon crushed red pepper
- ½ teaspoon cayenne (optional)
Instructions
- In a food processor or blender, blend together black beans, chicken broth, minced garlic, and pepper (if you choose to add it). Blend until smooth.
- Transfer mixture to a saucepan over low/medium head, or to a crockpot on low heat.
- Once bean mixture is heated, stir in seasonings and Feta crumbles. Heat approximately 15 minutes, for cheese to melt and seasonings to cook in.
- Best served hot with veggies or chips.
