Ingredients

  • 2 cans organic black beans (3.5 cups total if using cooked dried beans)
  • ½ cup low sodium chicken (or vegetable) broth
  • 1 teaspoon minced garlic
  • 2 sweet peppers or ½ a jalapeno (optional)
  • 1 cup Feta crumbles
  • 1 teaspoon chili powder
  • 2 teaspoons garlic powder
  • 1 teaspoon garlic salt
  • ¼ tablespoon crushed red pepper
  • ½ teaspoon cayenne (optional)

Instructions

  1. In a food processor or blender, blend together black beans, chicken broth, minced garlic, and pepper (if you choose to add it). Blend until smooth.
  2. Transfer mixture to a saucepan over low/medium head, or to a crockpot on low heat.
  3. Once bean mixture is heated, stir in seasonings and Feta crumbles. Heat approximately 15 minutes, for cheese to melt and seasonings to cook in.
  4. Best served hot with veggies or chips.
