It’s footbal season! For us, that means an increase in weekend snacking.

If you’re like me, you want to serve healthy alternatives to the normal snacks that are advertised at the grocery store. That processed queso? Not so healthy to dip your tortilla chips into. I don’t even think it’s made with real cheese. And don’t EVER buy that canned spinach dip. It.is.disgusting.

But I have good news for you. Snack dips don’t always have to be unhealthy!

This black bean feta dip is a delicious alternative to store bought dips. It doesn’t take a lot of effort to make either. Aren’t easy recipes the best ones to have on hand to whip up over the weekend?

It can be made on the stove or in a crockpot! All you need is a blender or food processor. We put a hurtin’ on this stuff over the weekend watching college football. I think the words, ‘This dip is just SO good!’ was spoken by one of us at least 5 times!

This dip is also made with Feta crumbles – which is REAL cheese! Oh, and real black beans, too. We used the organic Costco brand. I’ve been stockin’ up on those! The recipe as written is best served hot, but you can add extra chicken broth to the mix to get a thinner consistency for dipping as the dip cools down.

Ingredients

  • 2 cans organic black beans (3.5 cups total if using cooked dried beans)
  • ½ cup low sodium chicken (or vegetable) broth
  • 1 teaspoon minced garlic
  • 2 sweet peppers or ½ a jalapeno (optional)
  • 1 cup Feta crumbles
  • 1 teaspoon chili powder
  • 2 teaspoons garlic powder
  • 1 teaspoon garlic salt
  • ¼ tablespoon crushed red pepper
  • ½ teaspoon cayenne (optional)

Instructions

  1. In a food processor or blender, blend together black beans, chicken broth, minced garlic, and pepper (if you choose to add it). Blend until smooth.
  2. Transfer mixture to a saucepan over low/medium head, or to a crockpot on low heat.
  3. Once bean mixture is heated, stir in seasonings and Feta crumbles. Heat approximately 15 minutes, for cheese to melt and seasonings to cook in.
  4. Best served hot with veggies or chips.

Don’t just dip your tortilla chips in this stuff either. I don’t recommend fingers (totally not sanitary), but cucumbers, carrots, and pretzels are all fabulous second string dipping options.
