Description

Growing up in the Midwest, I fondly remember Friday fish fries and the nostalgic charm of salad bar salads. Those days were filled with choices like runny French dressing and ranch, which, while comforting, don’t quite match the vibrant flavors we can create at home. As much as I appreciate a good hole-in-the-wall bar experience, when it comes to making salads at home, I have a few standards.


Ingredients

  • 1/4 cup olive oil
  • 3 tablespoons lime juice (juice from one whole lime)
  • 1/2 cup fresh cilantro (packed)
  • 2 tablespoons apple cider vinegar
  • 1/4 cup Greek yogurt
  • 1/2 large avocado
  • 1 teaspoon minced garlic
  • 1 teaspoon ground cumin
  • 2 tablespoons water
  • 2 teaspoons honey

Instructions

  1. Combine Ingredients: Start by placing all the ingredients into a high-speed blender. This includes the olive oil, lime juice, fresh cilantro, apple cider vinegar, Greek yogurt, avocado, minced garlic, ground cumin, water, and honey.
  2. Blend: After this,Blend on high until the mixture is smooth. If your avocado isn’t very soft, you might need to add a few extra teaspoons of olive oil to achieve the right consistency.

  3. Taste and Adjust: Once blended, taste the dressing. You can adjust the flavors by adding more lime juice for tanginess or more honey for sweetness, depending on your preference.

  1. Storage: This dressing is best enjoyed fresh but can be kept in the fridge for up to 2 days. Make sure to keep it in an airtight container to preserve its freshness.
